IDAHO HOPS

The far western side of Idaho on the border of Oregon (we could not find a “Welcome to Idaho” sign) is home to thousands of acres of hop yards. When we landed in town this year to check out the current crop, we heard from our ‘hop wholesale’ friends at Mill95 about a new cultivar grown just down the street at Jackson Hop Farm called Pink. This new strain had beautiful aromas of sweet fruit & resinous candy. We knew we had to have some.

WHAT WE KNOW ABOUT PINK

Pink is an “aroma” hop meaning it will typically be used during dry hopping to impart flavor (vs boiled for bitterness). It matures early however which is great for growers as most of the popular aroma hops currently mature mid-season/late (often at the same time), sometimes leading to operational constraints. At 14% Alpha Acid, this hop solidly “Modern” in its potency. So where did Pink come from? That’s top secret. But what we did find out while chatting to the grower during lunch at a local watering hole is that the lineage ‘might’ be North American + European + Japanese. THE BEER

We decided to brew a Hazy IPA called “PINK” to showcase this beautiful Idaho grown hop. Heavy on the dry-hop at 5 pounds of T90 hop pellets per barrel. We are blessed with top quality local malt on the East Coast from Blue Ox Malthouse so we rang up Dave and had him send over enough barley, oats and wheat to hit 7% ABV. Brilliant gold color & deep malt character without being heavy. We knew we had a winner…
